Dairy-free No White Flour Easter Brownies

To make these, I repurposed a recipe from  Pat Jester's The Complete Cook. The icing is from Spruce Eats, I used 'vegan butter' instead of 'vegan margarine' and I'm not honestly sure if that was a problem. 

No dairy no flour easter brownies with vegan green icing nests and chocolate eggies

Ingredients

For 20 brownies:

  • 1/3 cup vegan butter (I used Melt vegan butter sticks and just used one stick, worked out fine)
  • 4oz dark chocolate (I used Swiss Delice 72% cocoa chocolates, took 23-24 of them to make up 4oz on our kitchen scale)
  • 1 cup sugar
  • 1 tsp vanilla extract (I used 1tsp vanilla bean paste, did not taste a difference)
  • 2 eggs
  • 3/4 cup almond flour
  • Optional: 1/2 cup chopped nuts (walnut and/or pecan optimal) and 1/4 cup flaked coconut. I took about 10 pecans and crumbled them on top half the brownies for my mum who loves brownies with nuts in them 

Instructions

  1. Preheat oven to 350F (175C).
  2. Grease and flour one 8" square baking pan. 9" works too but the brownies end up thinner, which may be a good thing with the icing and eggies adding height (and calories yikes).
  3. In saucepan over medium-low heat, melt chocolate and vegan butter together. Stir constantly to combine. Can take up to 12 min depending on your chocolate. I think mine took substantially less as it was hyper thin already.
  4. Let cool chocolate and butter for 10 minutes.
  5. After chocolate has cooled (seriously, do wait, otherwise bad things happen next) stir in sugar and vanilla.
  6. Add eggs, 1 at a time, beating well with a spoon until well-incorporated; repeat until both eggs added.
  7. Stir in flour, mix well.
  8. Stir in nuts and/or coconut if you're using them. Mix well.
  9. Pour into prepared pan, bake in oven.
  10. Bake for ~30-35min or until a toothpick inserted in center of brownies comes out clean. 
  11. Cool in pan on rack (VERY IMPORTANT if you're icing them especially! Unless you want a green easter sea). Recipe recommended 2hr of cooling, mine were cool in an hour. 
  12. Cut in squares while warm but do not remove until chilled (I cut mine after the hour was up, they seem fine) 

Decoration

  • If you want to decorate them, I used this recipe for icing. 
  • Add about 8 drops of green gel icing, or to preference, to make grass-like icing. 
  • Use icing bag and star-shaped nozzle of choice, make a circle on brownie and pass back over circle once more. 
  • Nestle in 2-3 eggies. 3 seems to make them look more full. 
  • Tadah easter brownies.
